    Thanks for the tip on Taste, Memory! I just reserved a library copy. The Proulx book is outdated in my opinion, much better information can be found in Ben Watson’s book and in Andrew Lea’s Craft Cider Making. I’d add James Crowden’s Ciderland to the list if you haven’t read it, really great photographs and interviews with West Country cidermakers.
